Scallion Frittata
Our scallions are a fan favorite here at Goodson's Gardens. They are a great add-on to almost any meal. For this recipe however, they take center stage.
Ingredients
- 1 Bunch Goodson's Gardens Scallions
- 5-6 eggs
- salt
- 1/2 cup milk or milk alternative
- 1-2 Tbspn cooking oil
**Recipe can be adjusted to fit the amount of people you're feeding.
Directions
- Heat up a pan that you will be cooking the frittata in on low heat and add the cooking oil.
- Prep the scallions by cutting off the roots and then chopping them up (about 1/4 inch pieces). Be sure to keep the white parts separate.
- Add the white parts, and thicker green parts to the pan and cover.
- Crack all your eggs, add milk and salt and mix. The milk adds a fluffy texture to the eggs.
- After the eggs, milk, and salt are mixed in, add the remaining part of the scallions to the bowl and stir to incorporate.
- Once the white have softened in the pan, spread around evenly and pour in the other ingredients.
- A traditional Fritatta would finish in the oven on broil. I use an alternate method: cover and cook for 5 minutes. Depending on your stove/pan, etc this may vary. When the eggs have cooked sufficiently on the bottom I cut it into large pieces (see pic) and flip it. At that point it only needs to cook for a minute or two more.
