Farm Chili topped with fresh Cilantro
This week I'd like to highlight Cilantro.
Cilantro is delicious simple chopped and used as a garnish on top of rice, beans, meat, tortillas, salad, soup, chili, and so many more. Lime juice is a great accompaniment to cilantro.
Farm Chili topped with fresh Cilantro:
Ingredients:
- 1 lb. sautéed ground beef (or chicken or a beef roast cooked in advance in a slow cooker)
- olive oil, for sautéing veggies
- 2 whole sweet onions, diced
- cloves of garlic, diced
- 1-4 Sweet potatoes or Butternut Squash (depending on size), diced
- 2 Goodson' Gardens Red or Purple bell peppers, diced
- 1 Bunch Goodson's Gardens Lacinato Kale, finely chopped
- optional - 1 can petite diced tomatoes
- 4 Tbs. Apple Cider Vinegar
- 1 qt. or more (to desired consistency) of chicken or beef broth
- salt and pepper to taste
- optional spices: Chili powder, garam masala, red pepper (for added heat), cumin, coriander
- 1/2 Bunch Goodson's Gardens Cilantro, chopped as garnish
- Goodson's Gardens Microgreens, as garnish
Instructions*:
- Cook meat however desired according to above options.
- Heat pot or deep pan on medium high heat with some olive oil
- Sauté onions until beginning to become translucent, then add garlic for about a min or two
- Add sweet potatoes/ butternut squash, then add bell peppers, cook until veggies just begin to slightly soften, about another 5 min
- Add remaining ingredients on list (up until cilantro) and turn heat to low, cover and let simmer until everything is fully softened
- Place in bowls and top with Cilantro and Microgreens, optional add-ons are Greek yogurt or sour cream, cheese, avocado, and a wedge of lime
- Serve hot with a slice of sourdough bread or on top rice. Delicious alongside a salad using Goodson's Gardens Lettuce, Microgreens, thinly sliced Easteregg radishes, and halved cherry tomatoes.
* Alternatively you can place all ingredients in a slow cooker and cook on low for 6-8 hours.
