Blistered Shishito Peppers
This has become a family favorite..well amongst most of us. Its quick and they are tasty. Now one thing to keep in mind is that about 1 out of 10 is spicy. Not too spicy, but it packs some heat.
First get a pan hot (like on high) and add a tablespoon of oil. Add shithitos until the bottom of the pan is covered. Mix occasionally as they begin to show color on them. Once they are sufficiently blistered all around remove them from the heat and season them with salt. There are recipes out there for fun dipping sauces which sound great but we haven't tried them. We usually eat them as a finger-food side with dinner.
